Olivier, who came from an agricultural background, has always been close to the earth which he cultivated from a very young age.
In 1970, at 24, he went to Paris to make his humanist and poetical dreams come true.
From 1976 to 1991, he went back to work in his village, Alcalá de Xivert, to promote local trade, responsible farming and tourism.
In 1991, he came back to France to Rungis market to take an active part in implementing these values. Bringing together his intellectual commitment and his love of the land enabled him to present his own ethical and economic vision to the suppliers and wholesalers at the M.I.N. at Rungis.
From 1992 to 2011, Olivier managed the importation of fruit and vegetables from Spain and from Latin America for well-known importers in France (Perpignan and Rungis), Belgium and Germany.
In 2012, he came back to Paris and set up the Fresal Company with Veronika.
